Moisture Determination

Moisture determination is one of the most important and most widely used measurements in the processing and testing of foods. Since the amount of dry matter in a food is inversely related to the amount of moisture it contains. Therefore, it is of direct economic importance to the processor and the consumer. Stability and quality of foods is also affected by moisture content; hence it also has a role in the safety of foods. Grains that contain too much water is subject to rapid deterioration from Mold growth, heating, insect damage and sprouting.

Methods:

Gravimetric Methods (Loss on Drying)

Hot Air Oven:  Standard, reliable, but slow; involves heating to constant weight (e.g., 103°C).

Electrical/Dielectric Methods

Moisture Meters: Use electrical properties (conductivity, capacitance) to estimate moisture, ideal for quick field tests in materials like wood, grain, soil.
